Raw Raspberry Cacao Slice
Base:

1 cup raw cashews
-
12 Medjool dates
-
1/4 cup coconut oil, melted & cooled

1/2 cup raw cacao powder
Filling:

12g Hair Atelier powder
-
1 cup raw cashews
-
1/3 cup shredded or desiccated coconut
-
1/3 cup maple syrup
-
250g frozen raspberries
Top:
-
60g coconut oil
-
1/4 cup maple syrup
-
1/3 cup raw cacao powder
Method

Line a Pan
Prepare a 20cm square baking dish with straight sides. Line it with baking paper, making sure it extends over two opposite sides for easy lifting later. -
Make the Base
In a blender or food processor, combine the cacao powder, coconut oil, dates, and cashews. Blend until a smooth paste forms. Spread the mixture evenly into the base of the lined pan and transfer to the freezer to set. -
Prepare the Filling
Add the frozen raspberries, Hair Atelier powder, maple syrup, coconut, and cashews to the blender. Blend until smooth and creamy, with no lumps remaining. Spread this vibrant pink layer over the chilled base and return to the freezer. -
Finish with the Topping
In a heatproof bowl set over a saucepan of simmering water (double boiler), gently melt together the coconut oil, maple syrup, and cacao powder. Stir until silky and well combined. Remove from heat and let cool to room temperature before pouring over the raspberry layer. Return the slice to the freezer one final time to set. -
Serve and Store
Once fully set, lift the slice from the tin using the baking paper. Cut into 20 bars. Store in the fridge or freezer and enjoy whenever you need a nourishing pick-me-up.
